Foodie Friday: Favourite Meal of The Week #1

Sweet Chilli Chicken Salad

I love making this. Especially in the summer. It's a great, light, healthy salad which is filling as well.

Basically I...

1. Place chicken in foil and cover in sweet chilli sauce
2. Wrap the foil up to make little parcels with the chicken in them
3. Cook in the oven at around 180 for about 18-20 mins
4. Whilst the chicken is cooking, stir fry some of your favourite veg (I use peppers, mushrooms, tomatoes)
5. Prepare a salad with some sweetcorn and feta cheese
6. Cut the chicken up once its cooked and toss into salad
7. Dress with your favourite dressing - I love Pizza Express' Pesto dressing, yum!
