Foodie Friday: Favourite Meal of the Week #2


Thai Green Chicken Curry

I love Thai food. We used to have a great Thai take away near us at our house in London but are yet to find one down in our new area, so I decided to make a Thai curry myself this week...


1. Chopped up 3 breasts of chicken, 2 peppers and a bunch of mushrooms
2. Put some oil in a wok and heat it up
3. Add a teaspoon of garlic paste
4. Add a tablespoon of thai green curry paste and stir round a bit
5. Add about 400ml of coconut milk and bring to a bubble
6. Stir in 2 teaspoons of fish sauce and a teaspoon of caster sugar
7. Add the chicken and veg
8. I then heat it for a while to get it to thicken

I have to be honest and say I cheat on the rice front! I can never get my rice to go 'sticky' like they have in Thai restaurants so I use this microwavable rice...
